Which is more efficient, a sort fields or a merge fields?
I have a step which Merge Fields 8 files and it takes 18 mins. Would a sort fields take less time?

In general, a MERGE is more efficient than a SORT. But the only way to know for sure for your particular case is to try both and compare based on your criteria for "more efficient".
