Difference between overlay and build

Hi,
Can anyone tell me what is overlay and build.I have a vague idea about build..but i dont know the difference between the two.And in which scenario we use build and overlay

BUILD:

OVERLAY: Reformat each record by specifying just the items that overlay specific columns. Overlay lets you change specific existing columns without affecting the entire record.

If you're not familiar with DFSORT and DFSORT's ICETOOL, I'd suggest reading through "z/OS DFSORT: Getting Started". It's an excellent tutorial, with lots of examples, that will show you how to use DFSORT, DFSORT's ICETOOL and DFSORT Symbols.
